Preparing dinner sometimes feels less like “The French Chef” and more like “Cutthroat Kitchen.” It’s easier to convince yourself to opt for takeout when the last thing you feel like doing after a long day is coming up with something to make yourself. Then one day of splurging turns into another and another until one day you look over at your stove top and see it’s now covered in dust and cobwebs!
Okay, maybe it’s not that melodramatic, but falling down the rabbit hole of fast food can happen fast when you don’t have a couple go-to meals that take little time to prepare. One of my current favorites is cauliflower fried rice. Not only can you barely taste the difference between this healthy alternative and the real thing, it also takes 20 minutes at most to make!
